Prolific PL2303 works fine and FDTI is also another big name. Any suggestions for chipset or specific cable? Prolific PL2303 and FTDI (?) are available. I am unable to find a silicon labs CP2104 based cable in the US. I've had good luck just pasting the device ID in this site

See for example on how to get the device ID and search For most serial-USB chipsets they have been just updating the same drivers of the same chipsets for nearly a decade, there is no point in making a new design. Maybe it's just old drivers from the CD? Did you already tried to identify the chipset and go download drivers from the actual chipset manufacturer? It's a common thing with branded stuff, they give you drivers but never update them even if the actual chipset manufacturer makes a new version. I have an IOGear USB to Serial, but it's not happy on my Windows 10 laptop with the supplied drivers.

Ony a couple had a VGA port but they were some kind of weird mini-PC thing. Yeah the Alix boards had a similar setup where you needed a serial and a null modem cable/adapter. I believe used a null modem cable to connect my ALIX to a PC with a serial port.
